- 1 tbsp cumin seeds
- 1 tsp chilli flakes
- 1/4 cup olive oil
- 1 lb lamb fillets
- 1 1/2 cups baby arugula leaves
- 1 tbsp lime juice
- 1/4 cup yogurt
- 4 pieces pieces flatbread or flour tortillas
- None None Toothpicks
Directions

1Toast spices in a small nonstick skillet on medium heat for 2-3 mins, until fragrant. Set aside to cool.

2Pound spices to a fine powder in a mortar and pestle. Stir in 1 tbsp oil. Season to taste. Rub over lamb. Marinate for 20 mins.

3Preheat an oiled grill pan or large skillet on high heat. Cook lamb for 3-4 mins each side, until cooked to desired doneness. Cover and let stand for 10 mins.

4Toss arugula, lime juice and half of remaining oil in medium bowl. Season to taste.

5Layer arugula, lamb fillet and yogurt on flatbreads. Roll each to enclose filling. Secure with a toothpick.

6Brush with remaining oil. Cook in grill pan, in batches, for 1 min each side until golden and crunchy. Serve sliced, secured with toothpicks.
