Ingredients
- 250 grams margarine
- 4 eggs
- 10 ml cream of tartar
- 750 ml flour
- 375 ml sugar
- 5 ml bicarbonate of soda
- 250 ml milk
- 1/2 ml salt
- 100 ml coconut flakes
- 25 ml cocoa
- 750 ml sugar
- 250 ml water
Directions

1For the lamingtons: Cream margarine and sugar till light and fluffy.

2Add eggs one at a time and beat well.

3Dissolve bicarb and cream of tartar in cold milk.

4Add to the mixture and fold in sifted flour and salt.

5Spread mixture in a large baking pan.

6Bake in a preheated oven at 180C for 45 minutes.

7When thoroughly cool cut into squares.

8For the Syrup: Boil sugar, water and cocoa together.

9Cool syrup.

10Dip cake squares into syrup and then coat on all sides with coconut.
