Ingredients

  • 250 grams margarine
  • 4 eggs
  • 10 ml cream of tartar
  • 750 ml flour
  • 375 ml sugar
  • 5 ml bicarbonate of soda
  • 250 ml milk
  • 1/2 ml salt
  • 100 ml coconut flakes
  • 25 ml cocoa
  • 750 ml sugar
  • 250 ml water

Directions

    For the lamingtons: Cream margarine and sugar till light and fluffy.

    Add eggs one at a time and beat well.

    Dissolve bicarb and cream of tartar in cold milk.
  4. 4
    Add to the mixture and fold in sifted flour and salt.
  5. 5
    Spread mixture in a large baking pan.

    Bake in a preheated oven at 180C for 45 minutes.

    When thoroughly cool cut into squares.

    For the Syrup: Boil sugar, water and cocoa together.

    Cool syrup.

    Dip cake squares into syrup and then coat on all sides with coconut.
