Ingredients

  • 2 (10 oz.) boxes frozen spinach, thawed and squeezed
  • 1 clove garlic, finely chopped
  • 1 medium onion, finely chopped
  • 10 oz. grated Mozzarella cheese
  • 3 c. cottage cheese
  • 1/2 c. Parmesan cheese
  • 1/4 c. parsley
  • 1 egg, beaten
  • 1/2 tsp. nutmeg
  • oregano to taste
  • salt and pepper to taste
  • spaghetti sauce
  • 1 pkg. large shells
  • 1 Tbsp. olive oil

Directions

    Cook pasta according to package directions.

    Drain.

    Gently toss with olive oil. Cover and set aside.

    Mix spinach, garlic, onion, cheeses, parsley, egg, spices and seasonings.

    Pour enough spaghetti sauce in 9 x 13-inch pan to sparingly cover bottom. Gently fill shells with spinach mixture, and place side by side in pan.

    Spoon more sauce over all.

    Cover with foil.

    Bake 30 minutes at 350°.

    Uncover.

    Sprinkle with more Mozzarella if desired, and bake 10 more minutes.
