  • 1 lb. Italian sausage
  • 1 clove garlic, minced
  • 1 Tbsp. basil
  • 1 can tomatoes (16 oz.)
  • 2 cans tomato paste (6 oz. each)
  • 1 box lasagna noodles
  • 2 eggs
  • 3 c. cottage cheese
  • 1/2 c. Parmesan cheese
  • 2 Tbsp. parsley flakes
  • 1/2 tsp. pepper
  • 1 lb. mozzarella cheese, sliced thin

    Remove casing from sausage.

    In skillet, crumble and brown meat slowly; drain.

    Add garlic, basil, tomatoes and tomato paste. Simmer uncovered 30 minutes, stirring occasionally.

    Cook noodles in boiling water; drain and rinse.

    In medium bowl, beat eggs with a fork.

    Add cottage cheese, parmesan cheese, parsley and pepper to eggs.

    Layer 1/2 of the lasagna noodles in a 9 x 13 inch baking dish. Spread with 1/2 the cottage cheese mixture.

    Add 1/2 the mozzarella cheese and 1/2 the meat sauce. Repeat layers.

    Bake at 375° for 30 minutes.

    Let stand 10 minutes before serving.
