Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 lb. ground pork or sausage
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1/2 c. green pepper, chopped
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 1 tsp. Italian seasoning
  • 2 tsp. dried parsley or 1/4 c. fresh chopped parsley
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. can tomatoes
  • 2 large cans tomato sauce or 4 small cans tomato paste
  • 3/4 c. water
  • 3/4 c. dry red wine
  • 2 tsp. Worcestershire sauce
  • 1/2 c. olives, sliced crosswise
  • 1/2 lb. fresh mushrooms, sliced lengthwise
  • 2 bay leaves
  • 2 eggs, beaten lightly
  • 3 c. fresh Ricotta or cream-style cottage cheese
  • 1/2 c. grated Parmesan or Romano cheese
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 pkg. lasagna noodles
  • 1 lb. Mozzarella cheese, sliced thin

Directions

    Cook noodles in a large amount of boiling salted water until tender; drain and rinse.

    Beat eggs and add remaining ingredients except Mozzarella cheese.

    Layer in long greased baking dishes (two 13 x 9 x 2-inch); 1 layer of noodles on bottom, pour sauce over noodles, 1 layer of cottage cheese mixture, 1 layer of Mozzarella.

    Set aside enough Mozzarella for the top to be added the last 5 to 10 minutes of baking.

    Continue layering until all ingredients are used.

    Bake at 325° for 30 minutes.

    Can be frozen and baked later.
