Ingredients

  • 1 cup coarsely chopped zucchini
  • 1/2 cup coarsely chopped onion
  • 1 lb Italian sausage
  • 2 garlic cloves, finely chopped
  • 2 1/2 cups spaghetti sauce (canned or homemade)
  • 3 cups beef broth
  • 1 cup water
  • 1 1/2 cups uncooked pasta, nuggets preferably radatore
  • 2 tablespoons chopped fresh basil (optional)

Directions

    Preheat a 4 QT pot or casserole pan heat on medium.

    Cook sausage with onion and garlic.

    Cook till done (8-10 minutes) and drain.

    Add spaghetti sauce, broth and water.

    Bring to a boil.

    Stir in pasta.

    Reduce heat, and simmer uncovered for 7 minutes.

    Stir zucchini into chili and cook for 4-5 minutes or until tender.

    Remove from heat and stir basil into soup, if desired.
