Lasagna Roll-Ups

  • 12 uncooked lasagna noodles
  • 1 lb lean ground beef
  • 1 large onion, chopped
  • 1 (14 ounce) jar spaghetti sauce
  • 1 (8 ounce) can mushroom stems and pieces, undrained
  • 1 (15 ounce) container ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed to drain
  • 1 cup shredded mozzarella cheese
  • 12 cup grated parmesan cheese
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 1 teaspoon garlic powder

Directions

    Heat oven to 350 and cook and drain noodles as directed on package.

    Cook beef and onion in skillet over med-high heat about 6 minutes, stirring occasionally, until beef is brown; drain.

    Stir in spaghetti sauce and mushrooms then heat to a boiling, stirring constantly.

    Pour into ungreased 11 by 7 by 1 1/2 inch baking dish.

    Mix ricotta cheese, spinach, mozz cheese, parmesan cheese, salt, pepper and garlic and spread 3 tablespoons of this cheese mixture over each noodle.

    Roll up each noodle and cut crosswise in half.

    Place cut side down on top of beef mixture.

    Cover with foil and bake 30 minutes.

    Serve with additional Parmesan cheese and enjoy!
