Lasagna With Shrimp

  • 1/2 lb. lasagna noodles
  • 2 c. Ricotta cheese
  • 2 Tbsp. chopped parsley (1 tsp. dry)
  • 1 c. grated Romano cheese, divided
  • 2 large eggs, beaten
  • 1 tsp. salt (optional)
  • 1/4 tsp. each: black pepper, dried oregano and garlic powder
  • 3 Tbsp. butter, melted
  • 1 can cream of shrimp soup or 2 cans (two make 2 1/2 cups sauce)
  • 1 lb. shrimp, cooked, shelled and deveined
  • 1 c. shredded Mozzarella cheese

    Cook lasagna al dente (not quite done) according to package directions; plunge into cold water.
