- 1 lb. ground chuck
- 1 medium onion, finely chopped
- 4 large cloves garlic, chopped
- 1 Tbsp. parsley, chopped
- 2 Tbsp. olive oil
- 12 oz. tomato paste
- 2 c. water
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 8 oz. lasagne noodles
- 2 eggs
- 3/4 lb. Ricotta or cottage cheese
- 3/4 lb. grated Mozzarella
- grated fresh Parmesan
Directions

1Cook ground beef, onion, garlic and parsley in olive oil until beef is brown.

2Add tomato paste, water, salt and pepper.

3Simmer 1 1/2 hours, stirring often.

4Cook lasagne as directed.

5Put 1/2-cup or more in large, shallow baking dish, then half of cooked lasagne, meat sauce, Ricotta and eggs (mixed), shredded Mozzarella.

6Repeat layers, ending with meat sauce.

7Sprinkle with grated Parmesan. Bake at 375° for 30 minutes.
