Layered Lemon Pie

- 20 chocolate wafers
- 1/2 c. butter, melted
- 1/3 c. lemon juice
- 3/4 c. sugar
- dash of salt
- 3 eggs, slightly beaten
- 1 pt. vanilla ice cream
Directions

1Crumble chocolate wafers in blender.

2Mix with 1/4 cup butter and pat into pie pan.

3Bake 8 minutes at 350°.

4Cool.

5Melt 1/4 cup butter in saucepan.

6Stir in lemon juice, sugar and salt. Stir to dissolve.

7Pour half of lemon mixture into eggs.

8Return eggs to rest of lemon mixture and cook over medium heat until thick.

9Cool.

10Place half of ice cream in cookie crust.

11Freeze. Place half of lemon mixture in crust.

12Freeze.

13Repeat layers. Freeze.

14Garnish with cookie crumbs or chocolate curls.

15Let stand 10 minutes at room temperature before serving.
