- 1 lb baking potatoes, unpeeled, cut into thin slices with a mandoline or sharp knife
- 7 tbsp butter, melted
- 2 cloves garlic, crushed
- 3/4 cup grated Parmesan cheese
- 6 None green onions, thinly sliced
- 1/2 cup fresh flat-leaf parsley, coarsely chopped
Directions

1Preheat the oven to 400°F. Line bottoms of four 1-cup metal molds or ovenproof ramekins with parchment paper.

2Pat potatoes dry with paper towels. Place a few potato slices in each mold. Combine remaining ingredients and dot a little over potatoes. Continue layering, finishing with potato. Cover each mold with foil. Place on baking pan.

3Bake for 30 mins, or until tender. Let stand for 5 mins before turning out and serving.
