Layered Salad

Ingredients

  • 1 lb. fresh spinach, torn into bite size pieces
  • 1 can sliced water chestnuts
  • 1/4 c. sliced celery
  • 1/4 c. chopped green onions
  • 2 c. mayonnaise
  • 2 Tbsp. sugar
  • 2 avocados, sliced
  • 2 to 3 tomatoes, sliced
  • 1/2 lb. cooked, crumbled bacon
  • 3 oz. grated Parmesan cheese, preferably fresh

Directions

    On a large platter or in a 9 x 13 x 2-inch or larger dish, arrange the following ingredients in order: spinach, water chestnuts, celery and onions.

    Spread mayonnaise over top. Sprinkle with sugar.

    Place in refrigerator overnight!

    Arrange avocado and tomato slices in alternate rows.

    Top with crumbled bacon, then Parmesan cheese.

    Cut through all layers to serve. Serves 8.
