Ingredients

  • 1 cup All purpose flour
  • 1 cup semolina flour
  • 1 egg
  • 2 tbsp olive oil
  • 1 -8 Tbsp water, as needed

Directions

    Combine flours in mixing bowl

    make a well in the center of the flour.

    Add egg and olive oil into the well.
  4. 4
    Using a dough hook, mix well.
  5. 5
    Add water as needed, little by little until a firm, soothe dough is formed.

    knead for three minutes.

    Sprinkle pasta press with flour and roll through each setting starting with the widest one.

    Process through each level until desired thinness is reached.

    NOTE: It is good to roll the dough through each setting 2 or 3 times, folding the dough into halves or thirds between each pressing.

    Extrude through pasta cutter or cut into shape by hand.

    Boil immediately or hang on racks to dry.
