- 2 tsp. vegetable oil
- 1/3 c. finely chopped onion
- 1 tsp. minced garlic
- 1/2 tsp. cumin
- 1/4 c. warm water
- 1/8 tsp. ground red pepper
- 1 (15 oz.) can pinto beans, drained and rinsed
- 2 tsp. fresh lemon or lime juice
Directions

1Heat oil in medium saucepan over medium heat.

2Add onion and cook until translucent, 3 minutes.

3Stir in garlic, cumin and red pepper.

4Cook 30 seconds.

5Add beans and cook 1 minute more, mashing beans with spoon.

6Stir in water; cook until water is absorbed.

7Remove from heat and stir in lemon juice.

8Makes 4 servings.
