Leek Salad

  • 3/4 lb. leeks
  • 2/3 c. sour cream
  • 1 small garlic clove, peeled and crushed
  • 1 tsp. prepared horseradish
  • 1 tsp. brown sugar
  • 2 Tbsp. wine vinegar
  • salt
  • pepper
  • paprika pepper to finish

Directions

    Cook the leeks in the minimum of boiling salted water for 15 minutes or until tender.

    Drain.

    Place in deep serving dish.

    Mix together the remaining ingredients with salt and pepper to taste and pour over leeks.

    Leave to marinate for at least 1 hour in the refrigerator.

    Then sprinkle with a little paprika to add colour (color) just before serving.
