Ingredients

  • 5 Tbsp. margarine
  • 2 c. chopped leeks
  • 1 small can mushroom pieces (with juice)
  • 1 1/2 c. sliced carrots
  • 1/2 c. sliced celery
  • 1/2 c. diced parsnips (optional)
  • 6 c. chicken broth
  • 2 tsp. dill weed
  • 5 c. diced raw potatoes
  • 1 c. milk
  • diced ham (optional)
  • 1 bay leaf
  • salt and pepper to taste

Directions

    In a large kettle, saute leeks, mushrooms, carrots, celery and parsnips in margarine for 5 minutes. Add broth, dill weed, salt and pepper. Add potatoes and bay leaf.

    Cook until potatoes are tender. Remove bay leaf.

    Add milk and meat (if used).
