- 6 medium leeks, white and light-green part only
- 1 12 cups heavy cream (usually called whipping cream in stores)
- 1 tablespoon coarse salt
- 1 tablespoon black pepper
- 12 cup grated pecorino romano cheese
Directions

1Preheat oven to 375 F if baking immediately.

2Slice leeks in half lengthwise.

3In a large, heavy skillet, place leeks and cream.

4Sprinkle salt and pepper over all.

5Cook five minutes on medium-high until mixture is boiling.

6Reduce heat to medium, cover, and cook five minutes.

7Remove cover and simmer another 15 minutes.

8Transfer to 8x8 or 9x9 baking dish.

9If making later, cover tightly with aluminum foil and refrigerate up to one day.

10If baking immediately, grate cheese over mixture and bake covered for about 30 minutes, or until golden.

11Test leeks with a fork for doneness.

12They should be soft to lightly firm.

13Let set for 5-10 minutes before serving.
