Leftover Turkey Shepherds Pie

- 1 Tablespoon Olive Oil
- 1/2 whole Medium Onion
- 2 cloves Garlic, Minced
- 2 cups Mixed Vegetables (I Used Carrots And Celery)
- 2 cups Leftover Turkey
- 1- 1/4 cup Low Sodium Chicken Broth
- 1- 1/2 cup Light Mashed Potatoes
- 4 Tablespoons Shredded Tillamook Cheese
Directions

1Heat olive oil in a medium sauce pan over medium high heat.

2Add onions and cook for about 2 minutes.

3Add garlic and mixed vegetables.

4Reduce heat to medium and cook until soft and fragrant, about 56 minutes.

5Add in turkey and chicken broth.

6Reduce heat to low and simmer until liquid reduces.

7Preheat oven to 350 degrees F. Remove vegetables from heat and scoop evenly into 4 lightly greased ramekins.

8Top with mashed potatoes and shredded cheese.

9Bake for about 20 minutes, or until cheese has melted and inside is bubbly.
