- 2 boneless skinless chicken breasts (baked, cubed)
- 3/4 - 1 cup frozen mixed vegetables
- 2 cups cooked rice, with frozen mixed vegetables mixed in
- 1 egg, beaten
Directions

1Heat a little olive oil in a wok or deep skillet.

2Add egg and cook slightly. You want to cook it all the way through, but don't over cook it. You don't want it to brown in this stage.

3Remove egg, break it up and set aside.

4Add a little more oil.

5Reheat chicken in the pan.

6Add rice and egg and toss until heated through.

7Serve immediately.
