  • 1 5/16 cups sugar
  • 1 lemon juice and zest
  • 9/16 cup margarine
  • 1 natural yogurt
  • 1 1/4 cups grated coconut
  • 2 cups flour
  • 1 teaspoon baking powder
  • salt

Directions

    Preheat oven to 180 degrees Celsius.

    Grease a pan with butter and sprinkle it with plenty of sugar. Set aside.

    Whisk well the eggs with sugar, juice, and lemon zest.

    Soften the butter in a microwave and add to the previous mixture, adding the yogurt and the coconut, too.

    Finally, add flour, baking powder. and a pinch of salt. Mix well without whisking.

    Place the dough in the pan and bake for about 40 minutes.

    Check the cooking with a toothpick. Unmold and let cool.
