Lemon Bar Cupcakes

- 1 (15 1/4 ounce) box lemon cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 18 tablespoons lemon pie filling
- 1 box sugar free lemon pudding mix
Directions

1Preheat oven to 350 degrees. Line muffin tins with cupcake liners.

2Make cake mix according to package directions adding lemon pudding mix.

3Fill each muffin tin 3/4 way full and bake for 15 - 18 minutes or until toothpick inserted near center comes out clean or with moist crumbs. Cool completely.

4Core cupcakes with small knife or cupcake corer. Toss centers (or save to put back on top of cupcakes). Be careful not to go through bottom of cupcake. Fill with 1 tablespoon of lemon pie filling.

5Frost as desired. (recipe on here as Lemon Bar Frosting).
