- 1 1/3 c. flour
- 1 c. sugar
- 1/3 c. soft oleo
- 2/3 c. Egg Beaters
- 1/4 c. lemon juice
- 2 tsp. lemon peel, grated
- confectioners sugar (optional)
Directions

1Blend 1 cup flour and 1/4 cup sugar, cut in oleo until mixture resembles coarse crumbs.

2Press mixture on bottom of 9 x 9 x 2-inch baking pan.

3Bake at 350° for 15 minutes or until lightly browned.

4Blend Egg Beaters, lemon juice, lemon peel and remaining flour and sugar.

5Pour over crust.

6Bake 15 minutes or more, until set.

7Cool slightly, sprinkle with confectioners sugar. Cool.

8Cut into 2 x 1-inch bars.
