- 2 1/2 c. all-purpose flour, divided
- 1/2 c. sifted powdered sugar
- 3/4 c. butter or margarine
- 1/2 tsp. baking powder
- 4 eggs, beaten
- 2 c. sugar
- 1/2 tsp. grated lemon rind (optional)
- 1/3 c. lemon juice
- powdered sugar
Directions

1Combine 2 cups flour and 1/2 cup powdered sugar.

2Cut butter into flour mixture with a pastry blender until mixture resembles coarse meal.

3Spoon flour mixture into an ungreased 13 x 9 x 2-inch pan.

4Press firmly and evenly into pan using fingertips.

5Bake at 350° for 20 to 25 minutes or until crust is lightly browned. Combine remaining 1/2 cup flour and baking powder.

6Set aside. Combine eggs, 2 cups sugar, lemon rind (if desired) and lemon juice.

7Stir well.

8Stir dry ingredients into egg mixture and pour over baked crust.

9Bake at 350° for 25 minutes or until lightly browned and set.

10Cool on a wire rack.

11Dust lightly with powdered sugar and cut into bars.

12Yields 2 dozen.
