  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. butter, softened
  • 4 egg whites
  • 1/2 c. skim milk
  • 1 grated lemon rind

Directions

    Combine flour, baking powder and salt on waxed paper.

    Cream sugar and butter.

    Beat egg whites and lemon rind.

    Add dry ingredients.

    Mix well until blended.

    Stir in milk. Bake in greased 9 x 5 x 3-inch loaf pan 40 to 50 minutes in a 350° oven. Transfer to wire rack.

    Cool completely before slicing.

    Makes 1 loaf.
