- 1/2 c. butter
- 1/2 c. sugar
- grated rind of 1 lemon
- 2 eggs
- 1/2 c. lemon juice
- 2 c. flour
- 3 tsp. baking powder
- 1 tsp. salt
Directions

1Cream butter and sugar together, then add lemon rind, eggs, one at a time, beating well after each is added.

2Stir in lemon juice, then sift in dry ingredients gradually.

3Beat well after each addition until you have a light and workable batter.

4Pour into buttered and floured 8 x 5 x 2-inch pan.

5Bake at 350° for 50 to 60 minutes.

6Turn out on a rack to cool.

7Serve with butter and preserves as a tea bread.
