  • 2 c. unsifted flour
  • 1 c. (2 sticks) unsalted butter, softened
  • 1/2 c. plus 1 Tbsp. confectioners sugar
  • 4 eggs
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. freshly squeezed lemon juice

    Beat together flour, butter and 1/2 cup confectioners sugar until well blended.

    Press into bottom of 13 x 9-inch baking pan.
