  • 3 Tbsp. flour
  • 2 Tbsp. melted oleo
  • 2 egg yolks
  • 1 c. milk
  • 1 lemon (juice and grated rind)
  • 2 egg whites, beaten stiffly
  • 1 (9-inch) unbaked pie crust

Directions

    Mix sugar and flour; add melted oleo, egg yolks and milk. Stir until smooth.

    Add lemon juice and grated rind.

    Fold in beaten egg whites.

    Pour into unbaked pie crust.

    Bake at 450° for 10 minutes; reduce heat to 350° and bake for 25 minutes or until done.
