- 2 eggs, separated
- 1/8 tsp. salt
- 2 Tbsp. flour
- 3/4 c. sugar
- grated rind of 1 large or 2 small lemons and juice
- 1 c. milk
- 1 (9-inch) unbaked pie crust
Directions

1Beat together the egg yolks, salt, flour and sugar.

2Add the lemon rind and juice; stir in the milk.

3Beat egg whites until stiff; fold into egg mixture.

4Pour into pie shell.

5Bake at 325° for 30 minutes.
