  • 1 c. sugar
  • grated yellow rind (off 1 lemon)
  • squeeze juice of 1 lemon
  • 2 level Tbsp. flour
  • butter (spoonful, size of egg)
  • 2 egg yolks
  • 1 c. milk
  • 1 unbaked pie shell

Directions

    Mix well together and add 1 cup milk.

    Beat the egg whites of your 2 eggs; fold into the other ingredients.

    Pour into unbaked pie shell.

    Bake at 325° for 45 minutes.

    (If top browns too fast, turn down to 250° for it must get to a custard in center.)
