- 1/4 c. butter or margarine
- 1 c. sugar
- 2 eggs, separated
- 2 Tbsp. flour
- juice and rind of 1 lemon
- 1 (9-inch) unbaked pie shell
Directions

1Cream together butter, flour and sugar until fluffy.

2Add egg yolks, lemon juice, rind and milk to the creamed mixture.

3Beat egg whites until stiff and fold into the mixture.

4Pour into the unbaked pie shell.

5Bake 10 minutes at 450°.

6Reduce heat to 325° and bake for 45 minutes until set like a custard pie.
