- 1 c. sugar
- 1/4 c. flour
- 1/4 c. butter or oleo
- dash of salt
- 2 eggs, separated
- 2 lemons (juice and grated peel)
- 1 c. milk
- 1 (9-inch) unbaked pie shell
Directions

1Combine sugar, flour, butter, salt and egg yolks.

2Blend until smooth.

3Beat in lemon juice and peel.

4Add milk, beating slowly. Beat egg whites stiff but not dry.

5Fold in mixture.

6Bake pie shell at 350° for 5 minutes.

7Pour in filling.

8Bake 40 minutes or until filling is firm.

9When cut there will be a delicate cake on top of the pie filling.
