- 1/4 c. cake flour
- 1 c. sugar
- 1/4 tsp. salt
- 1 1/2 tsp. grated lemon rind
- 1/4 c. lemon juice
- 1 c. milk
- 2 egg yolks, well beaten
- 2 egg whites, beaten stiff
Directions

1Sift dry ingredients into bowl.

2Stir in rind, juice, yolks and milk.

3Fold in egg whites.

4Pour into 1 quart casserole.

5Set in a pan of water 1-inch deep.

6Bake in preheated 350° oven for 50 minutes.

7Serve warm or cold.
