  • 2 c. sugar
  • 1 Tbsp. cornmeal
  • 2 Tbsp. flour
  • 2 Tbsp. cornstarch
  • 4 eggs, beaten
  • 1/4 c. lemon juice
  • 1/2 c. melted butter
  • 3 Tbsp. grated lemon rind
  • 1 (9-inch) unbaked pie shell
  • 1/4 c. milk

Directions

    Combine sugar, cornmeal, flour and cornstarch; stir in eggs. Add milk, lemon juice, butter and lemon rind; mix well.

    Pour into pie shell.

    Bake at 400° for 10 minutes.

    Reduce oven temperature to 350° and bake for 30 minutes longer or until filling is firm and lightly browned.
