- 2 c. sugar
- 1 Tbsp. cornmeal
- 2 Tbsp. flour
- 2 Tbsp. cornstarch
- 4 eggs, beaten
- 1/4 c. lemon juice
- 1/2 c. melted butter
- 3 Tbsp. grated lemon rind
- 1 (9-inch) unbaked pie shell
- 1/4 c. milk
Directions

1Combine sugar, cornmeal, flour and cornstarch; stir in eggs. Add milk, lemon juice, butter and lemon rind; mix well.

2Pour into pie shell.

3Bake at 400° for 10 minutes.

4Reduce oven temperature to 350° and bake for 30 minutes longer or until filling is firm and lightly browned.
