  • 1 (9-inch) pie shell (unbaked)
  • 2 c. sugar
  • 1 Tbsp. flour
  • 1 Tbsp. corn meal (rounded)
  • 4 eggs (unbeaten)
  • 1/4 c. melted butter
  • 1/4 c. milk
  • 1/4 c. lemon juice and grated rind (1/2 tsp. instant)

Directions

    Toss with fork the sugar, flour and corn meal.

    Add eggs, butter, milk, lemon juice and rind.

    Beat thoroughly.

    Pour into shell.

    Bake 15 minutes at 375°, then 45 minutes at 325°.
