  • pre-baked pie crust
  • 3 eggs
  • 1 1/2 c. sugar
  • 2 Tbsp. flour
  • dash salt
  • 2 Tbsp. butter or margarine, melted
  • 1 c. buttermilk (or 1 Tbsp. lemon juice or vinegar + enough milk to make 1 c.)
  • 1 to 1 1/2 tsp. lemon flavoring (flavor to taste)
  • powdered sugar

    Beat eggs, sugar, flour and salt until completely blended.

    Blend and pour into pie crust.
