  • 1 c. sugar
  • 3 eggs
  • 1 Tbsp. cornmeal
  • juice and rind of 1 lemon
  • unbaked pie shell

Directions

    Cream butter and sugar together.

    Add eggs, one at a time. Add cornmeal and blend well.

    Add lemon juice and rind (at least 1/3 cup juice).

    Pour into unbaked pie shell.
