- 1 lb. boneless chicken breast, cut in strips
- 1 onion, chopped
- 1 large carrot, sliced
- 1 garlic clove, minced
- 2 Tbsp. oleo
- 1 Tbsp. cornstarch
- 1 (14 1/2 oz.) can chicken broth
- 2 to 3 Tbsp. lemon juice
- 1 tsp. grated lemon peel
- salt
- 1 1/2 c. instant rice, uncooked
- 1 c. frozen broccoli
- 1/4 c. parsley
Directions

1In a skillet, cook the chicken, onion, carrot and garlic in butter until chicken is lightly brown.

2In a bowl, combine the cornstarch and broth; stir in the lemon juice, peel, salt and rice.

3Add to skillet and bring to a boil.

4Cover and simmer 5 to 10 minutes or until rice is tender.
