Lemon Chickpea Curry

- 2 cloves garlic, minced
- 1 large red onion, chopped
- 5-7 mushrooms, sliced
- 1 can chickpeas
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 cup cooked brown rice
- 1/2 tbsp tumeric
- 1/2 tbsp cayenne pepper
- pepper, to taste
- fresh parsley, to taste
- green onions, to taste
Directions

1Saute garlic, red onion, and mushroom over oil on medium-high heat until onions lose their stiffness. Add chickpeas, tumeric, cayenne pepper, parsley and green onions and saute on medium-high heat for 10 minutes. Add the juice from one lemon and saute for another 5 minutes. Serve over a bed of rice. Makes 2 generous servings.
