Lemon Chiffon Pudding

- 1 c. sugar
- 5 Tbsp. flour
- 2 Tbsp. butter
- pinch of salt
- 1/4 c. lemon juice
- grated rind of 1 lemon
- 3 well-beaten egg yolks
- 1 c. milk
- 3 stiffly beaten egg whites
Directions

1Blend the sugar, flour, butter and salt.

2Add the lemon juice, lemon rind, egg yolks and milk.

3Fold in the egg whites.

4Pour into buttered baking dish and set in a pan of hot water.

5Bake about 45 minutes at 350°.

6The flour and eggs form a cake on top with a delicious lemon pudding on the bottom.

7Delicious and so much quicker and easier to make than a lemon pie.
