- 133 grams butter
- 1 tablespoon lemon rind
- 1 cup powdered sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon vanilla
- 1 1/2 cups flour
Directions

1Preheat the oven to 180 celsius.

2Beat the butter with the lemon rind until creamy and add the powdered sugar. Continue to beat, adding the lemon juice and the vanilla.

3Add the flour, mixing gently to incorporate into batter.

4Shape the dough into balls, pressing each one with the palm of the hand to form discs.

5Bake at 180 C until the edges are slightly golden in color.

6Remove from oven and place on rack to cool.
