- 2 c. sugar
- 8 Tbsp. cornstarch
- dash of salt
- 6 eggs
- 1/2 stick oleo
- 4 c. milk
- 10 Tbsp. lemon juice
- 2 tsp. grated lemon rind
Directions

1Mix sugar, cornstarch and salt until blended.

2Melt butter in the milk and heat until lukewarm.

3Slowly add enough lukewarm milk to the sugar mixture to make a thin, smooth paste.

4Pour the paste back into the milk.

5Cook over moderate heat, stirring constantly, until mixture thickens and coats spoon.

6Slowly pour some of the hot mixture into 6 slightly beaten egg yolks.

7Beat into the hot mixture.

8Boil for 2 minutes, stirring constantly.

9Remove from heat; continue to stir while adding the lemon rind and juice.
