- 12 cup cake flour
- 12 cup sugar
- 6 large egg whites
- 34 teaspoon cream of tartar
- 14 teaspoon salt
- 34 teaspoon vanilla extract
- 1 lemon
Directions

1Sift flour and half of the sugar (=1/4 cup) in a bowl.

2Cut the lemon in half.

3Combine half the lemon juice with vanilla extract.

4If you want an extra burst of flavour, finely chop up the lemon skin, about 1 tablespoon worth.

5Set the mixture aside.

6Beat egg whites, cream of tartar and salt until peaks form.

7Add in the remaining sugar in the egg mixture slowly; mix at high speed until peaks.

8Add in flour to the egg mixture, and mix at low speed only until it's mixed completely.

9Separate batter into 12 cupcake trays.

10Bake at 350F for 20 minutes.
