Ingredients
- 1 c. sugar
- 1/4 c. flour
- 1/8 tsp. salt
- 2 Tbsp. melted butter
- 5 Tbsp. lemon juice
- grated rind of 1 lemon
- 3 well beaten egg yolks
- 1 1/2 c. milk, scalded
- 3 stiffly beaten egg whites
Directions

1Combine sugar, flour, salt, and butter; add lemon juice and rind.

2Add to combined egg yolks and milk; mix well.

3Fold in whites and pour into greased custard cups.

4Bake in a pan of hot water in moderate oven (325°) for 45 minutes.

5Can be baked in greased shallow baking dish.

6Serves 8.
