- 6 Tablespoons Unsalted Butter, At Room Temperature
- 1 cup Sugar
- 2 whole Eggs
- 2 whole Egg Yolks
- 3/4 cups Fresh Squeezed Lemon Juice
Directions

1Cream the butter and sugar with a mixer until its light and creamy (a few minutes).

2Add your eggs in one a time, mixing well after each addition.

3Add in lemon juice and mix together.

4Note: the mixture will look like cottage cheese but will become silky and smooth during cooking.

5Transfer the mixture into a heavy-bottomed sauce pan.

6Heat the pan over low-medium heat for approximately 10 minutes until the mixture thickens, stirring often.

7If the mixture is not thickening, increase your heat slightly and continue to stir.

8Transfer the cooled mixture into a mason jar with a lid and refrigerate.
