Ingredients
- 1 lb. butter or oleo
- 2 1/3 c. sugar
- 6 eggs
- 1/4 lb. candied pineapple
- 1/4 lb. white raisins
- 3 oz. lemon extract
- 4 c. sifted flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 lb. candied cherries (green and red)
- 4 c. pecans
Directions

1Cream butter and sugar.

2Add eggs (one at a time), beating well after each.

3Add lemon extract and blend.

4Sift dry ingredients together and add to creamed mixture.

5Add fruit and nuts.

6Bake in loaf pan at 300° for 1 1/2 hours or in a tube pan 2 1/2 to 3 hours.

7I prefer to use a tube pan.

8Needs to be made a week or so ahead.
