- 1 box vanilla wafers, crushed
- 1 large can milk
- 1 large pkg. lemon jello
- 1 3/4 c. hot water
- 1 c. sugar
- pinch of salt
- 1/4 c. lemon juice
- grated lemon rind (optional)
Directions

1Chill canned milk for several hours.

2Mix jello, hot water and salt.

3Chill until half set; then beat until light and fluffy. Add lemon juice and sugar.

4Beat cream until thick and add to the lemon mixture.

5Crush wafers and cover the bottom of a 9 x 12 x 2-inch dish using only half of crumbs.

6Pour in the mixture and cover with remaining crumbs.

7Chill overnight or at least several hours, until set.

8Will serve 12.
