- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. butter
- 1 c. sugar
- 2 tsp. grated lemon rind
- 3/4 c. milk
- 3 egg whites, beaten
Directions

1Cream butter; add sugar gradually, creaming until light and fluffy.

2Add lemon rind.

3Sift dry ingredients and add alternately with milk.

4Fold in beaten egg whites and blend in well.

5Bake in 2 greased pans at 375° for 25 to 30 minutes.
