- 2 1/2 c. sifted plain flour
- 1 1/2 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/2 c. salad oil
- 6 eggs, separated
- 3/4 c. cold water
- 2 tsp. lemon juice
- 1 tsp. lemon rind
- 1/2 tsp. cream of tartar
- 1 tsp. lemon extract
Directions

1Sift flour, baking powder, sugar and salt together in a bowl. Make a well; add oil, egg yolks, water, lemon juice and rind. Beat until smooth.

2Add cream of tartar to egg whites.

3Beat very, very stiff.

4Blend gently with cake mix.

5Pour into ungreased tube pan.

6Bake at 350° for 70 to 80 minutes.

7Remove when cool.
