Ingredients

  • 3 tbsp olive oil
  • 2 tbsp fresh sage leaves, chopped, plus extra sprigs to garnish
  • 2 tbsp fresh thyme leaves, chopped, plus extra sprigs to stuff and garnish
  • 2 tbsp fresh oregano leaves, chopped, plus extra sprigs to garnish
  • 2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 (6-7 lb) whole chicken
  • 1 sprig fresh parsley, plus extra to garnish
  • 2 None lemons, cut in half, plus extra small lemons for garnish

    Preheat oven to 350°F.

    Whisk together olive oil, herbs, lemon zest and lemon juice. Season. Set aside 1/3 of the mixture. Place chicken in a roasting pan and season. Stuff with thyme sprigs, parsley sprigs and lemon. Truss chicken then rub remaining olive oil mixture over skin. Roast for 1 hour 30 mins, or until a thermometer inserted into the thickest part of the thigh reads 165°F.

    Brush with remaining olive oil mixture then let rest for 10 mins. Garnish with fresh lemons and herbs.
