- 1/2 c. shortening
- 1 c. sugar
- 2 eggs
- grated rind of 1 lemon
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 c. milk
Directions

1Cream shortening.

2Beat in sugar gradually.

3Add eggs, beating well.

4Stir in lemon rind.

5Mix flour, salt and baking powder together.

6Blend in dry ingredients alternately with milk.

7Mix well.

8Bake in greased loaf pan in moderate oven at 325° to 350° for 50 to 60 minutes.

9Remove from oven and pour glaze made from juice of a lemon and 1/4 cup sugar over cake immediately.

10Let cool 10 minutes.

11Remove from pan and cool completely before slicing.
